I know that miso soup is traditionally far simpler than my usual version. I often make it as a meal in a bowl. Last night I thought the sushi salad might not be enough. A simple soup seemed enough to make a meal. It would also warm us, given that the weather is more winter than spring lately.
The sushi salad was made because Sylvia keeps requesting sushi for dinner. After all, she now has sushi rice moulds (you can see them here). I was laughing with my mum about a 3 year old wanting sushi rice, nori and edamame for dinner. How different to the food I ate as a child! Even new dolly tasted some edamame. Sylvia also discovered a love of dried shitake mushrooms. (When did children stop eating peas and potatoes and boring stuff!)
I also made some chocolate tofu mousse for dessert. Because I was worried there wasn't enough dinner, you understand. (It also used up the rest of the silken tofu.) I ate the leftover sushi salad and miso soup for lunch today. They were delicious.

Miso soup
serves 2-3
3-4 cups of boiling water
1/2 tsp kombu-shitake dashi stock powder (optional)
handful of dried chopped shitake mushrooms
strip of kombu
100g silken tofu, broken up
1-2 tsp dark miso
1-2 tsp white miso
handful of cooked broccoli florets
handful of corn kernels (I used tinned)
2 spring onions, finely sliced
Place water, stock powder (if using), mushrooms, kombu and tofu into a small saucepan. Simmer for about 10 minutes. Remove the kombu, cut into small pieces and return to the pot. Transfer a few spoonfuls of liquid from the saucepan to a small bowl. Stir in the dark miso and white miso until dissolved. Tip back into saucepan. Add in the broccoli, corn and spring onions. Heat through and serve.

Love it! I first tried sushi in my twenties... I don't think I would have liked the nori as a kid, but I love that Sylvia does! :)
ReplyDeletethanks Janet - I think I was in my twenties when I first tried sushi - I still find the nori slightly fishy - I think sylvia loves it more because I bought her a flower shaped cutter for the nori (you can see some flowers in the middle photo on the salad)

ReplyDeleteI should give miso soup another try one day but miso is kind of in the same territory as tempeh for me. I enjoy it some ways but not others. Your soup does look lovely.

DeleteI love miso soup - but I add a lot more than is traditional - a plain miso soup is like a mug of hot water with vegemite in it. I find that adding both dark and white miso gives a better balance of flavours and it is not so intense
I smiled throughout this post - sushi salad has been on my mind since I ate a wonderful one whilst away (and yours looks wonderful too); I love gorgeous new Dolly; I also love that you made more mousse; and Sylvia's eating tastes are wonderfully advanced. All fantastic :)

Thanks Lucy - I am very sentimental about old Dolly too - she was special for quite a few reasons and I wonder if Sylvia will ever take to a doll like that again - would love her to be as happy with new dolly but it takes time to build a relationship that is meaningful

DeleteLOL - if Sylvia is like I was as a child, probably not long. I wanted to unbriad it, and in the case of one poor Barbie, I dried her hair with a hair dryer - and it melted.
