Pancakes with fried peaches and blueberry sauce

On the weekend I made pancakes.  From a packet!  We still have pancake mix leftover from our holiday in January.  So no recipe.  Just some fruity pancakes for Shrove Tuesday.

We had run out of milk.  I used some apple juice instead.  I sliced a peach and pan fried the slices in butter.  They took a while to soften and brown.  Long enough to chat to a friend on the phone and chase Sylvia around the kitchen.  We had leftover blueberry syrup made with frozen blueberries, maple syrup and orange juice.  I poured it over the peaches.  Lovely!  Rather gourmet, actually!  With very little effort.

We had savoury pancakes for dinner tonight but I will have to write about it later - stay tuned....

  1. I love the idea of making pancakes with juice instead of milk. I'll have to keep that in mind. I finally made chickpea pancakes last week (post to come, eventually!) so I think my pancake bases are covered for a while...if I'd thought ahead a bit more I could have had them today and slotted into the Shrove Tuesday tradition!

    1. thanks Kari - we also tried some apple juice in porridge which worked well - I often miss shrove tuesday but had a few chats about it coming up this year and so I think I have had pancakes on the brain :-)

  5. Blueberry syrup is delicious. I usually schmear them in raspberry spreadable fruit

    1. Thanks Matt - I was inspired in the blueberry syrup by a post (I forget which one, unfortunately) which suggested adding fruit to maple syrup because it is healthier and cheaper!

  6. I *still* haven't had pancakes in over ten years. One day I'll try again, using interesting flours perhaps, so that I can find a way to enjoy them... Love how you jazzed these up with fried peaches!
