Sandwiches, CLT and an Avocado glut

I had planned to write another post today and then we slept past the alarm, I took Sylvia to school without my house keys.  a friend drove me to the city to get E's keys and then I helped her dismantle her bed and put together a new bed.  So instead let me tell you how much I am loving avocados right now, especially in sandwiches.

When I dropped off Sylvia at school the other morning, one of the mothers had a basket of mini avocados.  I took lots, forgetting I had just bought three the day before.  You can see how small the little avocados are compared to a smallish regular one.

One of my first ideas for the avocados was this amazing epic avocado sandwich I found on Amuse Your Bouche.  It was like a posh crisp sandwich.  Avocado, tomato, lettuce, potato crisps and cheese.  Mine was only slightly different: avocado, tomato, baby spinach, bbq corn chips and peanut butter.  So delicious with that little bit of crunch from the chips.

I was determined to make myself something healthy for dinner with avocado.  So I decided to make a bowl of goodness with what I had.  This black bean, pumpkin and avocado bowl was made up of:
  • black beans and mixed them with fried garlic, tomato, red capsicum, spring onion, oregano, smoked paprika and cumin,
  • pumpkin roasted with some smoked paprika,
  • steamed asparagus,
  • mashed avocado with lemon juice, garlic, spring onion and a bit of water to thin it down,
  • corn chips

It was so good and I felt so good after eating it.  More of the black beans and roasted pumpkin went into a chilli non carne.  Avocado is perfect on a bowl of chilli and rice.

So today I decided I needed a CLT - that is a Coconut Bacon, Lettuce and Tomato sandwich.  This was not a traditional one as I used baby spinach rather than lettuce and a roll rather than slices of bread but, oh my giddy aunt, it was delicious!

If only Sylvia would eat this.  I let her make lunch this morning while we were scurrying around getting ready and she made fairy bread - yes that is 100s and 1000s (sprinkles) in her sandwich.  But I will be enjoying more avocados on my chilli non carne tonight at dinner.

  1. they look so good, I haven't had a CLT in ages. I've avoided buying avocado because of the price lately (plus trying not to eat so much bread... if I make a loaf at home I easily eat half while it's still warm and polish the rest off in 24 hours)!

    1. thanks Faye - I don't have CLTs often but when I had the avocado it suddenly dawned on me that I needed one - I probably don't need that many avocados but it has been a treat - and I don't have much control with fresh bread but E has been buying it like it has been going out of fashion this week!

  4. Omg I love that "posh crisp sandwich" hahaha! I had a peanut butter & avocado sandwich the other week, all that fatty goodness <3 it's funny that Sylvia won't eat avocado sandwiches - my 3yo will ONLY eat avocado sandwiches. He used to eat mainly Vegemite sandwiches but now he tells me "it's yuck Mummy!" and he just wants "green" (avocado). Like, 5 times a day (no exaggeration!).

    1. Thanks Kyra - I looove eating avocado and peanut butter together - it is like double the comfort factor. That is funny that your kid will only eat avocado sandwiches - it must make it easier to eat out with all the avo smashes in cafes. Sylvia has never taken to avocado and as I found it bland as a kid I am sympathetic but I hope she will like it one day

  5. Those baby avocadoes are very cute. And I am very intrigued by the posh crisp sandwich! I've never had any crisp sandwich but if I was to try one, that sort of type would be it (not the poshness, I hasten to add, but the inclusion of vegetables).

    1. Thanks Kari - maybe I should have said a healthier crisp sandwich. And those baby avocados were actually easier to use once I realised I could just squeeze out the flesh rather than having to cut or scoop it out - they were really really ripe which is why my friend was giving them away - she said she had heaps on her tree

  7. We have a glut of them too which suits me fine because we love them and have been ripening two of them every few days so that there is a constant supply! :D

  9. What a day! I have just bought some avocados! I do love the sound of that chip and avocado sandwich - I might make that for my lunch tomorrow xx

  10. That is an epic sarnie if I ever I saw one! I love crisps in sandwiches too (and avocado on everything!) I think your healthy tea would be my idea of heaven - asparagus, avocado and beans are some of my favourite foods. Add crisps on top and it's a definite winner!

  11. I want mini avocados! They are perfect single-serve size =) I try to find the smallest ones and I use half and tend to forget about the other half and sometimes have to trash it :/
    Your sandwich sounds so good!! Peanut butter with avocado huh? And chips? It sounds a little strange, yet delicious!

    1. Thanks Kimmy - I loved being able to squeeze out a serving size amount of avocado from one of these - I find using up all an avocado a challenge too. And one of my favourite sandwiches is avocado, peanut butter, tomato and seasoning - it is a great filling quick breakfast - so I highly recommend the combo
