I am really glad I had some great housemates who taught me heaps about cooking<br /><br />Awww thanks Hannah - you know I'd do my best :-)<br /><br />Thanks ricki - I don't mind cutting up pumpkin but I do have a great heavy chef's knife that is really good for getting through pumpkin - maybe if I stuffed the whole pumpkin a few more times I would find it easier but I had to think it through much more than just chopping pumpkin - in fact I think I might just make this stew with chopped pumpkin rather than in a pumpkin in future<br /><br />Thanks Mel - glad to hear of your tomatillo experience - I highly recommend hominy - they have a corny taste without the succulence of corn kernels - they are almost chewy more like beans than vegetables if that makes sense - but they taste horrid straight out of the tin and need to be cooked until they soften! The first time I cooked with tinned tomatillos I used the juices which made the dish rather tart so I have drained them since and prefer it this way. What did you think of the hominy? My favourite way to eat kabocha is to keep the skin on and slice it into thick strips, then bake it. I've never thought of just separating the skin to make pumpkin skin chips! Neat idea.
