Your fancier cheese on toast (with pesto, tomato, mushrooms and spinach) sounds really good too. I thin...I love the history of cheese in literature! I think I can still recite the whole Monty Python cheese shop sketch from my student days. Funnily enough I've been reading about rarebit recently as well, and it seems that there are several other national variations. According to Jane Grigson (in 'English Food') the name is definitely rabbit and not rarebit (though your explanations for the name sounded pretty convincing to me). There were different Scotch, Welsh and English rabbits already by 1747, apparently. The Scotch one seems just to be cheese laid on top of toast (what, no meltyness?!), and the English one is toast with red wine poured over it to soak the bread, and then cheese melted on top. Shades of your soggy bread?
