They were soft and lovely. I also put a water bath in the oven with them and brushed butter on top before I bake them. They rise for 2 hours before I baked. Some of them I put raspberry han in the middle and sealed them tightly before their final rise... these were THE BEST. I made another batch of similar doughnuts that were a bit crunchy - I think you are right about letting them rise enough and perhaps cook them a bit longer under the foil which will keep them softer then when they bake uncovered. When I cut out the donuts, I should have made the center hole smaller and perhaps let them rise longer. They came out a bit hard and crunchy. I will just have to try again.
