I don't like eggs much but I also am a bit suspicious of what is in egg replacer so I just try and stick to recipes without too many eggs. So I guess any river will do.<BR/><BR/>On another topic, while you don't expect great nutrition from a mud cake, one advantage that the Wattleseed you added imparts is that the rate at which the sugar is absorbed from the cake is slowed down. Wattleseed has a very low glycaemic index (and the fat in the cake also slows gastric emptying). So as long as you pay attention to your total calorie intake, at least you can feel a little better about the 'healthy' aspect of your Wattleseed mud cake.<BR/><BR/>Also, while you won't taste much from the Wattleseed, you will get some texture from the grounds. The challenge with getting the roasty toasty notes from the Wattleseed is that so many of the flavour components in Wattleseed are the same as in chocolate. I have a feeling I have seen it called a yarra mud cake in melbourne (and if not someone should) because our yarra river used to be said to be upside down because it was so full of mud!
