I got better colour development on top of the muffins in the larger pans.

I added chopped lovage to the recipe in place of parsley. I've only recently started cooking with this herb and I thought its "meaty" flavour would complement the parsnip and smoked cheese nicely - it did!

We enjoyed the muffins wam with some sliced ham and chunks of heritage apple. I too noticed the difference in flavour on cooling but with the lovage in the mix I preferred them warm. Next time I would add a little salt to the recipe, particularly if we are going to eat them warm.Mrs Sparklesnoreply@blogger.comtag:blogger.com,1999:blog-6742756814967464811.post-40852481717114388832010-09-27T18:54:17.770+10:002010-09-27T18:54:17.770+10:00Finally the round up for Breakfast Club Muffins is...Finally the round up for Breakfast Club Muffins is up!

http://fussfreeflavours.com/2010/09/breakfast-club-3-muffins-the-round-up/

Thanks for taking part and we'd love to see you next month!Helen @ Fuss Free Flavourshttp://fussfreeflavours.comnoreply@blogger.comtag:blogger.com,1999:blog-6742756814967464811.post-24941989855600793682010-09-11T20:39:07.102+10:002010-09-11T20:39:07.102+10:00Thanks Anh - I am sure the original recipe with ca...Thanks Anh - I am sure the original recipe with carrot is worth a try now I have tried these with parsnips

Thanks Ashley - savoury muffins at breakfast are great - I wish more cafes would catch on to the idea!Johanna GGGhttps://www.blogger.com/profile/08594201473931487490noreply@blogger.comtag:blogger.com,1999:blog-6742756814967464811.post-72546544793526674142010-09-09T10:58:12.416+10:002010-09-09T10:58:12.416+10:00I'm with you - I prefer savoury muffins for br...I'm with you - I prefer savoury muffins for breakfast. But never in a muffin. As proved these savoury bites would be good with a soup, albeit a day later.

I enjoyed reading about your expereince at the Taste of Melbourne Food show and the goodies you came back have intrigued me.
