My husband assures me that they’re as sweet as regular mallows, so maybe I’ve forgotten. I too have always been curious about graham crackers and s’mores. I made them because I have never had the chance to buy them. Making marshmallow is because it is hard to buy vegan marshmallow but also because I was curious - my mum would make marshmallow occasionally as a kid so making it makes a bit more sense to me. My sister and I made marshmallows once, but we decided our result wasn't that much better than the ones in the plastic bag from the supermarket.<br /><br />In sum: your recipe looks great but somehow is a different type of thing than my childhood associations.
