Not only is this the tastiest -- I use it where ever I want a soft or melted cheese, quinoa, rice, beans, etc. -- it's the most economical and healthiest.

ACV is an easy swap for the lemon juice. And the first time I made this, I didn't have tapioca, so I used regular flour. Didn't work quite as well, but in a pinch, or instead of waiting until you have everything, it passes.

Thanks so much for this recipe. I keep forgetting that I sewed some onto my daughter's skirt for Halloween and when I picked it up the other day, I jumped out of my skin...... The vegan mozzarella is amazing - I think it is one of the best vegan cheeses I have tried - so I am not surprised it pleases vegans and non-vegans alike in your household. I regret to say I haven't done lots of testing because my blog does not work that way - but I think it was stringier with the aqua faba which makes sense because I think aqua faba imitates some of the gloopiness of egg whites - however if I get a chance, I will add some notes to the postJohanna GGGhttps://www.blogger.com/profile/08594201473931487490noreply@blogger.comtag:blogger.com,1999:blog-6742756814967464811.post-45565293560517752052015-11-07T21:25:52.087+11:002015-11-07T21:25:52.087+11:00Thanks Joey - aqua faba is the hero of the vegan w...Thanks Joey - aqua faba is the hero of the vegan world for sure! you should definitely try the cheese before next halloweenJohanna GGGhttps://www.blogger.com/profile/08594201473931487490noreply@blogger.comtag:blogger.com,1999:blog-6742756814967464811.post-58778539508553838902015-11-07T21:25:08.745+11:002015-11-07T21:25:08.745+11:00Thanks Allysia - it is bizarre to have it stringy ...Thanks Allysia - it is bizarre to have it stringy - and amazingly simple which is why I have made it a few times. I've never seen a squeezy cheese like that - I had thought that if it wasn't vegan maybe I would just make a cheesy white sauce. But I really love the vegan mozzarella. It has quite a bit of salt so is not too bland. You could go easy with the pesto :-)Johanna GGGhttps://www.blogger.com/profile/08594201473931487490noreply@blogger.comtag:blogger.com,1999:blog-6742756814967464811.post-52633596304105898102015-11-07T10:15:58.222+11:002015-11-07T10:15:58.222+11:00What a cool looking pizza - great gor Halloween. What a cool looking pizza - great gor Halloween.Cakelawhttps://www.blogger.com/profile/17205068748520541380noreply@blogger.comtag:blogger.com,1999:blog-6742756814967464811.post-60504237334036325532015-11-07T00:06:19.911+11:002015-11-07T00:06:19.911+11:00Yay, that is so cool you made my spiderweb pizzas!...Yay, that is so cool you made my spiderweb pizzas! (I didn't get a pingback on my blog from your link so I've only just seen this now by chance!) Yours look so good (and I love the story about the spider hahaha. My boys have stuck our plastic spiders on their bedroom walls, I have a mini panic attack everytime I see them haha). I'm loving the stringy vegan mozzarella too, my (omnivore) husband even requested it when we made pizza last night :D sooo good!Kyra Howearthhttps://www.blogger.com/profile/13135288845077585901noreply@blogger.comtag:blogger.com,1999:blog-6742756814967464811.post-42876367970698360932015-11-06T19:43:17.645+11:002015-11-06T19:43:17.645+11:00The stringyness comes from the tapioca starch rath...The stringyness comes from the tapioca starch rather than the aquafaba, if you use tapioca starch to thicken liquids that always happens.
