You might want to put the dough in the fridge overnight after the first rise, removing from the fridge about an hour or so before you shape the bagels. This also increases the flavor allowing the yeast to slowly tease more starch into sugars. I'm in Taos, NM at 7000 feet and have to make some additional adjustments, but have finally made bagels as good as they get outside of the Bronx. I remember one place we got them at used to boil them in water that had honey in it, which produced a lovely glaze on the outside and a not-too-sweet bagel.
