The two things that put me off attempting to make ice-cream are I don't own an ice-cream maker and I've always loved gelati/sorbets more than ice-creams. I've never actually tried separating the coconut cream out to make ice-cream - I generally just use the full tin, but I get most of my ice-cream recipes (or the beginnings of) from The New Scoop - if you want to explore vegan ice-cream it's seriously a great book to start with!
