I can understand why spinach was a rather inferior substitute. If you have an Indian grocery store nearby, you should have no trouble finding them. Years ago I tried an "authentic" (though how would I know?) recipe for Chicken Biryani, and it literally took all day to make! Yours seems much more reasonable, and the photo at the top is stunning!
