Baked potato with haggis for St Andrews Day

It's St Andrew's Day.  Scotland's patron saint.  Last year we were in Edinburgh, chilled to the bone and walking through the Castle.  This year we went to the Melbourne Museum and then home to baked potatoes with vegetarian haggis, in memory of the wonderful baked potatoes in Cockburn Street, Edinburgh.

We had baked potatoes with cheese, coleslaw and corn on Thursday so it was just a matter of putting the leftover potatoes in the oven while I made the haggis.  I serve it with grated cheese, ploughman's relish and some leftover coleslaw.  Easy!  (More St Andrew's Day menu ideas at Allotment to Kitchen.)

We ate dinner in front of Brave, a brilliant Scottish film (aimed at kids but such a great story it appeals to all ages).  It wasn't a fancy meal.  So in lieu of some Scottish background, I give you a photo of one of the views we enjoyed from Edinburgh Castle last year.

    1. If I had been more organised I would have bought turnips to make mashed neeps as well to moosh into the baked potatoes but haggis and potatoes are very traditional

  4. It seems like far more recent, and also far long ago, that you were in Scotland. I suppose that is the case for many things actually - time is a mysterious thing. This sounds like a great dinner to honour St Andrews day this year!

    1. Thanks Kari - time is indeed a mysterious entity - Sylvia talks about a long 5 minutes and a short 5 minutes and I think she understands that time doesn't always feel as rational as the clock would suggest

    1. Thanks Veganopoulous - hopefully you might have a chance again - but if not I highly recommend some veg haggis - with nachos is one of my favourite ways to eat it but baked potatoes is great too

  6. This looks awesome! I'm going to give it a go while it's not too hot still - I have a giant bag of floury baking spuds to use up and this looks like the perfect 'meat' to a roast dinner. :-)

    1. Thanks L - I love nut roasts with roast dinners and consider haggis to be like a nut roast because it has all the ingredients though it doesn't hold its shape well. Enjoy the spuds

  8. This looks so good! I'm really annoyed I missed the baked potato shop in Edinburgh but there was too much choice for vegans in the city and I was only there for a few days. A belated Happy St.Andrew's Day to you too Johanna!

    1. Thanks Emma - we haven't been to baked potato shop on recent visits to Edinburgh but I loved it when I worked nearby. Hopefully there will be other visits for you to try their great baked potatoes
