Smoky potato, bean and corn salad

On Sunday we went to Geelong for my brother Dave's birthday.  My mum did a BBQ.  Sausages, coleslaw, potato salad, a green salad and a pumpkin, chickpea and couscous salad.  It was all very satisfying with cake, fudge and fruit to follow.  So when we got home I wanted simple, quick and easy.  I saw a Spicy Potato and Corn Salad recently on Eat Me Delicious. It was exactly what I wanted.

It was adapted from Isa's Appetite for Reduction, a cookbook that I have not been able to bring myself to buy.  Maybe if I have a few more good experiences like this I might reconsider.  It was easy and delicious.  E topped his with tabasco sauce.  I had some microwaved asparagus with mine.  I burnt my finger on the steam when it came out of the microwave and spent the meal with a finger in a bowl of cold water.   Not a bad end to a day of skipping, limbo and hula hoops (the kids, not me).

Smoky Potato Bean and Corn Salad
Adapted from Appetite for Reduction via Eat Me Delicious
Serves 2 as a main meal

3 medium potatoes, diced
1 cob of corn (makes about 1/2 cups)
1 cup kidney beans
1/4 green capsicum, chopped
1 spring onion, finely sliced

Dressing:
2 tbsp red wine vinegar
1 tbsp olive oil
1/2 tsp agave (or honey)
1/4 tsp smoked paprika
1/8 tsp garlic powder
1/8 tsp salt
shake or two of ground chilli

Place potatoes in small saucepan with boiling water.  Bring to the boil and simmer for 15 minutes.

Meanwhile, steam the corn in the microwave (I think I put mine in a plastic bag for 2 minutes).  Cut kernels off the cob and place in a medium salad bowl with kidney beans, capsicum and spring onions.

When potatoes are cooked (but not mushy) drain and tip hot potatoes into the salad bowl.  Pour dressing over the salad and toss until the salad is well coated.  Serve warm or at room temperature.

  1. It has been years since I tried hula hooping but I used to love it! The potato salad sounds delicious :D

  2. Are you sure you didn't partake in the skipping, limbo and hula hooping? Not even a little? ;)

    This looks like the sort of meal I favour on very hot days (although on such days I'd serve it cold). I like the addition of kidney beans. Sounds like a good day all around, except for the finger!

I actually like the sound of a lot of the recipes in Appetite for Reduction, we got it before we left for India so haven't had a chance to try many of them but the combination of agave and smoked paprika or liquid smoke seems to be a theme, but quite a good one I would think. I'll definitely get stuck in when we are back in London with our books and selection of ingredients. The salad sounds like a good one.

  5. I love Appetite for Reduction, you should reconsider! I've made at least a dozen things from there and only 2 or 3 things were filed away under never to make again, with many more things that have been made multiple times. I actually plan to post on the book sometime (on my new blog launching soon!), I have a large collection of photos from my adventures cooking from it. I've yet to try this recipe, but will have to!

  6. So happy to hear you enjoyed this salad! I like your use of smoked paprika. The chipotle puree is so spicy, and I never know what to do with the rest of it. The recipes in Appetite for Reduction really appeal to me, and some of them have been really great but some are just okay. Overall I'm quite happy with it though.

  9. Thanks Lorraine - I was just avoiding wayward hula hoops on the weekend rather than doing any twirling - but I have had a go to demonstrate over the past few years :-)

    Thanks Ashley - it was such a timely post for me as it was just what I felt like - I would have used chipotle if I wasn't feeling so lazy though I like substituting smoked paprika and chilli pepper to control the spiciness

    Thanks Hannah - I love this salad particularly because it is so good that I could take it to a BBQ and be quite happy if I couldn't eat anything else there - and most people could eat it as long as it wasn't too spicy - low fat, gf, vegan and nut free!

  10. Sorry about the finger, but this does sound good! Not sure why it would be considered "diet" food. . . nothing here to indicate it's from a reducing cookbook! Great for a day of birthday fun. :)
